Peppermint fudge

8 oz / 2,5 dl heavy cream
2-3 tbsp erythritol or other sweetener
1/4 tsp sea salt
1 tsp peppermint extract
Directions
- Put the cream and sweetener into a pan and boil for 10-15 minutes over low heat stirring continuously.
- When the mixture is thick and fudgy, add sea salt and peppermint extract.
- Pour the mixture into small paper cups or line a small dish with parchment paper.
- Put in the fridge overnight.
