Peppermint fudge

Ingredients

  • 8 oz / 2,5 dl heavy cream

  • 2-3 tbsp erythritol or other sweetener

  • 1/4 tsp sea salt

  • 1 tsp peppermint extract

Directions

  • Put the cream and sweetener into a pan and boil for 10-15 minutes over low heat stirring continuously.
  • When the mixture is thick and fudgy, add sea salt and peppermint extract.
  • Pour the mixture into small paper cups or line a small dish with parchment paper.
  • Put in the fridge overnight.
