1 cup / 250 ml unsweetened almond milk, or coconut milk for a creamier latte
1 tbsp unsweetened pumpkin purรฉe
1 tbsp heavy creamย
1 tsp pumpkin spice mix
1 tsp vanilla extract
1 tbsp MCT oil / caprylic acid / coconut oil
1 tbsp powdered erythritol, or keto-friendly sweetener of choice
1 shot of espresso or ยฝ cup brewed coffee
Whipped creamย and pumpkin spice or cinnamon on top, optional
Directions
- In a small saucepan, heat the almond milk, pumpkin purรฉe, pumpkin spice mix, vanilla extract, and sweetener over medium heat. Stir all the time until itโs warm, but do not boil.
- Remove from heat and whisk in the MCT oil (or caprylic acid/coconut oil) and heavy cream.
- Brew your coffee or prepare a shot of espresso, and pour it into a mug.
