Ingredients

  • 1 cup / 250 ml unsweetened almond milk, or coconut milk for a creamier latte

  • 1 tbsp unsweetened pumpkin purรฉe

  • 1 tbsp heavy creamย 

  • 1 tsp pumpkin spice mix

  • 1 tsp vanilla extract

  • 1 tbsp MCT oil / caprylic acid / coconut oil

  • 1 tbsp powdered erythritol, or keto-friendly sweetener of choice

  • 1 shot of espresso or ยฝ cup brewed coffee

  • Whipped creamย and pumpkin spice or cinnamon on top, optional

Directions

  • In a small saucepan, heat the almond milk, pumpkin purรฉe, pumpkin spice mix, vanilla extract, and sweetener over medium heat. Stir all the time until itโ€™s warm, but do not boil.
  • Remove from heat and whisk in the MCT oil (or caprylic acid/coconut oil) and heavy cream.
  • Brew your coffee or prepare a shot of espresso, and pour it into a mug.
  • Pour the pumpkin-spiced milk mixture over the coffee and stir to combine.
  • Optional, top with sugar-free whipped cream and sprinkle extra pumpkin spice or cinnamon on top for a festive look.
