Indulging in a delicious meatloaf doesn't have to be a guilty pleasure, especially when you're following a keto lifestyle. Ingredients

  • Meatloaf
  • 1 1/2 lb / 700 g ground beef, at least 20% fat

  • 2 eggs

  • 1/2 cup / 1 dl fresh basil or 2 tbsp of dried basil or oregano

  • 1 onion

  • 3 oz / 90 g feta cheese

  • 3 oz / 90 g cherry tomatoes

  • 15 olives

  • 2 tsp salt

  • 1 tsp paprika

  • 1 tsp pepper

  • 1/2 tbsp olive oil to grease the pan

  • Optional: Sauce
  • 1/2 / 1 dl cup tomato puree

  • 1 tsp vinegar

  • 1 tsp garlic powder or 1 garlic clove, crushed

  • 1/2 tsp salt

  • 1/2 tsp pepper

Directions

  • Preheat your oven to 375°F / 185°C.
  • In a bowl, mix ground beef, eggs, and spices and set aside.
  • Chop cherry tomatoes into small chunks and slice olives in half.
  • Lightly mix tomatoes, olives, and feta cheese with the beef mixture.
  • Grease a loaf pan with olive oil, then gently press the meat mixture into the pan
  • Bake for 40 minutes if you're not adding the sauce.
  • If you want to add the sauce, mix the sauce ingredients in a small bowl.
  • Take the meatloaf out of the oven, add the sauce on top, then bake for an additional 10 minutes.
  • Let rest for 10 minutes.

Notes

  • You can line the loaf pan with parchment paper instead of greasing it, to ensure the meatloaf doesn't stick to the pan.
  • Mix ingredients gently so that you won't get too dense meatloaf.
