Ingredients
- Meatloaf
1 1/2 lb / 700 g ground beef, at least 20% fat
2 eggs
1/2 cup / 1 dl fresh basil or 2 tbsp of dried basil or oregano
1 onion
3 oz / 90 g feta cheese
3 oz / 90 g cherry tomatoes
15 olives
2 tsp salt
1 tsp paprika
1 tsp pepper
1/2 tbsp olive oil to grease the pan
- Optional: Sauce
1/2 / 1 dl cup tomato puree
1 tsp vinegar
1 tsp garlic powder or 1 garlic clove, crushed
1/2 tsp salt
1/2 tsp pepper
Directions
- Preheat your oven to 375°F / 185°C.
- In a bowl, mix ground beef, eggs, and spices and set aside.
- Chop cherry tomatoes into small chunks and slice olives in half.
- Lightly mix tomatoes, olives, and feta cheese with the beef mixture.
- Grease a loaf pan with olive oil, then gently press the meat mixture into the pan
- Bake for 40 minutes if you're not adding the sauce.
- If you want to add the sauce, mix the sauce ingredients in a small bowl.
- Take the meatloaf out of the oven, add the sauce on top, then bake for an additional 10 minutes.
- Let rest for 10 minutes.
Notes
- You can line the loaf pan with parchment paper instead of greasing it, to ensure the meatloaf doesn't stick to the pan.
- Mix ingredients gently so that you won't get too dense meatloaf.
