Ingredients
- Meatballs
1 lb / 400g ground beef
1 egg
1 small onion (optional)
2 cloves of garlic (optional)
12 leaves of chopped fresh mint (optional)
1 1/2 tsp salt
1 tsp lemon pepper
- Filling
7 oz / 200g cherry tomatoes
6 oz / 180g feta cheese
2 tbsp extra virgin olive oil
12 leaves of fresh basil
1 tsp salt
1/2 tsp lemon pepper
Some grated cheese on top (optional)
Directions
- Preheat the oven to 425°F / 220°C.
- Chop the onion and garlic finely.
- Mix ground beef, eggs, chopped onion and garlic (optional), mint leaves (optional), salt, and pepper in a bowl.
- Let the mixture sit while preparing the filling.
- Cut cherry tomatoes in half.
- If feta cheese is in the form of a block, dice it into smaller pieces.
- Put basil, feta cheese, and cherry tomatoes into a casserole dish.
- Drizzle olive oil, salt, and pepper on them.
- Form small meatballs, and add them to the casserole dish.
- Add grated cheese on top of the meatballs (optional).
- Bake the casserole in the oven for 25-30 minutes.
