This juicy dish is perfect for a busy day. You can also prep the casserole in the fridge and pop it in the oven the next day.

Ingredients

  • Meatballs
  • 1 lb / 400g ground beef

  • 1 egg

  • 1 small onion (optional)

  • 2 cloves of garlic (optional)

  • 12 leaves of chopped fresh mint (optional)

  • 1 1/2 tsp salt

  • 1 tsp lemon pepper

  • Filling
  • 7 oz / 200g cherry tomatoes

  • 6 oz / 180g feta cheese

  • 2 tbsp extra virgin olive oil

  • 12 leaves of fresh basil

  • 1 tsp salt

  • 1/2 tsp lemon pepper

  • Some grated cheese on top (optional)

Directions

  • Preheat the oven to 425°F / 220°C.
  • Chop the onion and garlic finely.
  • Mix ground beef, eggs, chopped onion and garlic (optional), mint leaves (optional), salt, and pepper in a bowl.
  • Let the mixture sit while preparing the filling.
  • Cut cherry tomatoes in half.
  • If feta cheese is in the form of a block, dice it into smaller pieces.
  • Put basil, feta cheese, and cherry tomatoes into a casserole dish.
  • Drizzle olive oil, salt, and pepper on them.
  • Form small meatballs, and add them to the casserole dish.
  • Add grated cheese on top of the meatballs (optional).
  • Bake the casserole in the oven for 25-30 minutes.
