6 oz / 170g grated cheese
4 eggs
5 tbsp potato fiber
1 tbsp psyllium
1 tbsp olive oil
2 tsp baking powder
2 tsp pesto
1 tsp garlic powder or 1 garlic clove, crushed
1/2 tsp salt
Fresh rosemary sprig
Directions
- Preheat the oven to 400°F / 200°C.
- Mix grated cheese, eggs, and pesto in a bowl.
- Mix dry ingredients in another bowl.
- Gently mix dry ingredients into the cheese-egg mix.
- Let the dough sit for 10 minutes.
- Sprinkle some rosemary leaves on top (optional).
- Brush olive oil on top.
- Bake for 20-25 minutes or until lightly golden brown.
- Let cool for a couple of minutes.
Notes
- You can also add sliced olives, sliced cherry tomatoes, or fresh thyme to the dough.
