Keto Mediterranean Focaccia

Ingredients

  • 6 oz / 170g grated cheese

  • 4 eggs

  • 5 tbsp potato fiber

  • 1 tbsp psyllium

  • 1 tbsp olive oil

  • 2 tsp baking powder

  • 2 tsp pesto

  • 1 tsp garlic powder or 1 garlic clove, crushed

  • 1/2 tsp salt

  • Fresh rosemary sprig

Directions

  • Preheat the oven to 400°F / 200°C.
  • Mix grated cheese, eggs, and pesto in a bowl.
  • Mix dry ingredients in another bowl.
  • Gently mix dry ingredients into the cheese-egg mix.
  • Let the dough sit for 10 minutes.
  • Sprinkle some rosemary leaves on top (optional).
  • Brush olive oil on top.
  • Bake for 20-25 minutes or until lightly golden brown.
  • Let cool for a couple of minutes.

Notes

  • You can also add sliced olives, sliced cherry tomatoes, or fresh thyme to the dough.
