Christmas cookies

3,5 oz / 100g butter
1 egg, room temperature
0,6 cup / 1,5 dl almond flour
0,2 cup / 0,5 dl coconut flour
0,4 cup / 1 dl powdered erythritol
1 tbsp psyllium
1 tsp baking powder
2 tsp gingerbread spice
1 tsp cinnamon
1 tsp cardamom
Directions
- Melt the butter in a pan, add erythritol, gingerbread spice, cinnamon, and cardamom.
- Boil quickly and let the mixture cool.
- Mix almond- and coconut flour, psyllium, and baking powder in a bowl.
- Add the egg and dry ingredients, and mix well until you get a smooth dough.
- Cover the dough with plastic wrap (or better to use beeswax wrap) and put it in the fridge overnight.
- Next day, roll the dough and cut it into cookies.
- Bake at 350°F / 180°C for 8-10 minutes.
