Christmas cookies

Ingredients

  • 3,5 oz / 100g butter

  • 1 egg, room temperature

  • 0,6 cup / 1,5 dl almond flour

  • 0,2 cup / 0,5 dl coconut flour

  • 0,4 cup / 1 dl powdered erythritol

  • 1 tbsp psyllium

  • 1 tsp baking powder

  • 2 tsp gingerbread spice

  • 1 tsp cinnamon

  • 1 tsp cardamom

Directions

  • Melt the butter in a pan, add erythritol, gingerbread spice, cinnamon, and cardamom.
  • Boil quickly and let the mixture cool.
  • Mix almond- and coconut flour, psyllium, and baking powder in a bowl.
  • Add the egg and dry ingredients, and mix well until you get a smooth dough.
  • Cover the dough with plastic wrap (or better to use beeswax wrap) and put it in the fridge overnight.
  • Next day, roll the dough and cut it into cookies.
  • Bake at 350°F / 180°C for 8-10 minutes.
