These cookies are quick to make, and their light, buttery flavor makes them a perfect low-carb snack or dessert option!

Ingredients

  • 1/2 cup / 1 dl coconut flour

  • 1/4 cup / 0,5 dl erythritol or monk fruit sweetener

  • 1/4 cup / 0,5 dl melted butter or coconut oil

  • 1 large egg

  • 1 tsp vanilla extract

Directions

  • Preheat the oven to 350ยฐF (175ยฐC) and line a baking sheet with parchment paper.
  • Mix the coconut flour, sweetener, melted butter, vanilla, and egg in a bowl until a dough forms.
  • Roll the dough into small balls and flatten them slightly on the baking sheet, or use a cookie cutter.
  • Bake for 8-10 minutes depending on your oven and if you want blonde or brown cookies.
  • Let them cool completely before serving; they will firm up as they cool.
